The Corners Seems Destined For Food

Next to Taco Bell on the empty lot where Rexburg Food Center once stood, a new strip mall is being built on the corner of Center and Main Street.

With the history of the corner, it may be no surprise that the first announced tenant is Gandolfo’s Deli.

“We’re excited to come into the end spot (of the strip mall),” says Darren Ernst of Rigby, owner of a Gandolfo’s Deli in Idaho Falls and the new one in Rexburg. “We’re looking forward to taking part in the economic growth and helping with downtown revitalization.”

The lot is owned by the Bob Carlson family of Rexburg.

“We’re thrilled to death to have Darren and his family be our anchor,” Carlson says. “(The strip mall) is going to be an asset to Main Street.”

The entire strip mall will be 7,000 square-feet, Carlson says.

“The building is designed to accommodate four tenants, but it can be altered,” says his wife, Bobbette. “We’ve signed one tenant, but others have approached us.”

The strip mall will be called Purrington Plaza and Main Street Crossing, Carlson says. The Purrington refers to the late Bob Purrington, Bobbette’s father and an owner of the Rexburg Food Center.

The new deli will be about 1,700 square-feet and will hire 10-15 full- and part-time employees. The deli is scheduled to be built in 60 days.

“We’re local people, and as a result we’re using local people to do the construction,” says Carlson.

Gunderson-Cook Construction is working on the project. Workers started pouring concrete on Friday.

Carlson says Main Street is an ideal location for the strip mall.

“With all the growth going on we decided this would be a good idea,” he says.
